Pickled Cabbage: Sprinkle shredded red cabbage and leave for 24 hours. Drain well & put into bottles. Pour hot spiced vinegar over ad seal tightly - easy!
Tomato Relish: Cut 12 large tomatoes & 4 large onions, sprinkle with 25g salt and leave overnight. Drain and into a pot. Add 500g brown sugar & 3 chopped chillies, add vinegar to cover. Bring to boil then simmer for 1.5hours. Mix 1Tbsp Mustard, 1Tbsp Curry Powder & 2Tbsp Flour with enough vinegar to make smooth paste. Add to mixture and boil 5 minutes then seal into jars.
Bread & Butter Cucumbers: Slice 4 large cucumbers, layer and sprinkle with salt (approx 1/4cup). Cover & stand overnight. Rinse well with cold water and drain well. Combine 1.5c white vinegar, 1c water, 3/4c sugar, 2tsp mustard seeds. Stir till sugar dissolved, bring to boil then simmer for 5min. Add cucumbers and bring to boil, remove from heat and quickly tong into jars. Add a few strips of sliced red pepper to each jar, fill with vinegar mixture. Seal when cold.
